White Chili

I'm not much of a cook. It's really not my thing. In the last couple of years I've felt bad for Matt. He's probably getting sick of the same old thing. Well this year it was one of my resolutions to start cooking better. It hasn't been that bad. I've actually enjoyed doing it!!! My Sister has given me some easy recipes that are really tasty. Here is one that I have never heard of. White Chili. When she told me about it, I knew I wanted to try it. She gave me the recipe for it, and tonight I made it for dinner. It turned out so yummy, we really enjoyed it. I love watching Matt gobble up his food, it makes me feel good, and that I can actually cook. So thanks Kate for the yummy recipe we will be making it again soon, and next time we are doubling it. I also made a yummy salad. lettuce and spinach mix, craisins, apples, broccoli, and carrots. We like it, and it's a great way to get your vegetables.


Here is the White Chili recipe if your interested:


Saute until brown:

1 lb. boneless skinless chicken breasts, cut into 1/2 inch cubes

1 medium onion chopped

1 TBSP. vegetable oil

1 1/2 tsp. garlic powder


Add: 2 cans (15 1/2 oz.) great white northern beans rinsed and drained

1 can (14 1/2 oz) Chicken broth

2 cans (4 oz.) chopped green chilies

1 tsp. Salt

1 tsp. dried Oregano

1/4 tsp. Cayenne Pepper

1 tsp. ground cumin

1/2 tsp. pepper


Bring to a boil, reduce heat, simmer uncovered for 30 min. Remove from heat; stir in:

1/2 cup whipping cream

1 cup (8 oz.) Sour Cream


Yield 7 servings

ooh, that one looks yummy and creamy! Pampered chef has one that I make a lot, but this one looks more creamy. I like that. Thanks for sharing.
